CATHEDRAL CATERING
 
Don't call me "chef ", because I'm not one.  I don't even play one on TV. Instead I'm just someone who decided during a belated midlife crisis, that I wanted to be a better cook and to explore flavors that had never been a part of my Midwest  upbringing --- basically, anything other than roast beef, mashed potatoes, and green beans.  Over the next 5 years I tried hundreds of new recipes and when I didn't like the outcome, I'd try different ingredients, or adjust seasoning, change measurements, and vary cooking techniques.  I became very comfortable with making a recipe my own and eventually creating entirely new dishes.  I collected over 200 cookbooks, studied the chemistry involved in baking, and for a while, added wine to everything I made (I wouldn't recommend Shiraz Eggs).  
 
Today I am fortunate enough to have for my occupation that which I have grown to enjoy so very much --- cooking and baking!  Since my very first catering job in 1999, my small company, Cathedral Catering, has grown into a respected professional catering and event planning company serving the greater Seattle area.  Together with my very talented daughter, Laura, and a crew of professional servers and kitchen staff (who are almost like family), I have catered countless weddings, corporate luncheons, family celebrations, fund raising events, and holiday parties. We've even catered for some celebrities, including Paris Hilton, Michael Jordan, Al Gore, and members of the Saudi Royal Family.  I consider it a pleasure and a privilege to serve everyone of my clients the foods which I so dearly love to make.  May I cook for you?

OUR PRODUCT   As a customer, you have the benefit of my ignorance. When I first started catering, I was completely unaware that many caterers routinely supplement a few "signature" menu items with
pre-made desserts, or frozen hors d'oeuvres, soup bases and frozen bread dough.  Having always cooked from scratch using fresh seasonal ingredients, I continued to make my catering items in the same way, from scratch --- and that's how we continue to make all of our menu items today. Our breads, rolls, desserts and pastries are baked fresh daily using imported butters, fresh fruits and nuts, rich dark chocolates, and our own proprietary blend of flour.  Our entrees reflect the bounty of the season, drawing upon locally grown vegetables and meats from eastern Washington.  The result, as many of you have told us often, is a decidedly superior meal.
 
Like you, at Cathedral Catering we also care about the world we live in. For this reason, we use organically grown produce and meats, as well as free-range organic poultry and fresh wild seafood. We purchase only free-trade, organic whole bean coffee. And unless specifically requested by the client, we do not use disposable containers, but rather a collection of artful ceramic, wooden, crystal, and stainless platters and bowls.
 
PRICING Our pricing varies based upon the number of guests at your event, the changing costs of seasonally available produce and seafood, and any cost savings we incur as a result of bulk ordering that can be passed on to you. For this reason, we price each catering job individually and are happy to give you a per person quote once you have selected a menu and event date, and have an estimated guest count.
 
YOUR BUDGET  Many clients have a budget in mind, but are unsure about their menu selection. We are happy to compile several menus for you to consider based upon the budget information you provide us. These menu ideas can serve as a starting point for further discussion and a final selection that satisfies both your appetite and your budget.
